Ingredients
- 2 red bell peppers, roasted, peeled, and finely chopped
- 1 green bell pepper, finely chopped
- 1 hot chile pepper (such as jalapeno , finely chopped
- 1 tomato, finely chopped
- 1 small onion, finely chopped
- 1 clove of garlic, minced
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- ½ teaspoon ground cayenne pepper (adjust according to spice preference)
- Salt, to taste
- Pepper, to taste
- Fresh chopped parsley or cilantro for garnish
Instructions
- In a mixing bowl, combine the roasted and chopped red bell peppers, green bell pepper, hot chili pepper, tomato, onion, and garlic.
- In a small bowl, whisk together the lemon juice, olive oil, cumin, cayenne pepper, salt, and pepper.
- Pour the dressing over the vegetables and toss well to coat all the ingredients.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
