Nkhwani wa Ndiwo (Malawian Vegetable Fritters)
Nkhwani wa ndiwo is a delightful Malawian snack made from a variety of vegetables. These vegetable fritters are crispy, flavorful, and perfect for a quick and tasty treat.
Ingredients
- 2 cups grated mixed vegetables (e.g. carrots, cabbage, onions, and green beans)
- 1 cup all-purpose flour
- 1 egg, lightly beaten
- 1 teaspoon baking powder
- 1 green chile (optional, for heat), finely chopped
- 2 tablespoons cornmeal
- Salt, to taste
- Vegetable oil, for frying
Instructions
- In a mixing bowl, combine the grated mixed vegetables, all-purpose flour, beaten egg, baking powder, and finely chopped green chili (if using).
- Add the cornmeal to the mixture and mix well until everything is evenly combined.
- Season the mixture with salt to taste. Adjust the seasoning according to your preference.
- In a frying pan, heat vegetable oil over medium-high heat.
- Take spoonfuls of the vegetable mixture and carefully drop them into the hot oil. Flatten the fritters slightly with the back of the spoon.
- Fry the fritters until they are golden brown and crispy on both sides. Use a slotted spoon to remove them from the oil and place them on paper towels to drain any excess oil.
- Repeat the frying process with the remaining vegetable mixture.
- Allow the fritters to cool slightly before serving.
