  1. Mix the flour, semolina, salt, sugar, and yeast in a bowl.
  2. Gradually add warm water and knead until a smooth dough forms.
  3. Divide the dough into small balls and let rest for 30 minutes.
  4. Flatten each ball into a thin sheet.
  5. Brush with oil and butter, then fold into a square.
  6. Let the folded squares rest for 15 minutes.
  7. Flatten gently and cook on a hot griddle until golden brown on both sides.
  8. Serve warm with honey, jam, tea, or savory accompaniments.
