Maffé (West African Peanut Stew) III

Maafe is a stew made from groundnuts. It originated from the Madinkwa and Bambara people of Mali.

Ingredients

• 2 lbs stew beef
• ½ cup peanut butter
• 1 cup water
• 1 teaspoon black pepper
• 1 teaspoon salt
• 2 tablespoons tomato paste
• 1 onion
• Garlic (optional)

Instructions

1. Boil meat in a pot with salt and onion.
2. Fry the meat in a pan of oil.
3. Blend together the tomato, pepper, and garlic until smooth.
4. Pour the blended mixture into a pot and add the peanut paste. Stir until thick.
