Homemade Tortilla Chips

Ingredients
- 1 bag of corn tortillas
- Vegetable oil for frying
- Seasoning
Instructions
- Fill a pot with 2 inches of oil.
- Clip a frying thermometer to the side of the pot so that the tip is submerged in the oil but not touching the bottom.
- Heat the oil to 360°F (180°C).
- Slice a pile of tortillas in half through the centre.
- Stack the two piles together and cut across the center again to form quarters.
- Stack the quarters and cut through to form eighths
- Gently drop the tortilla pieces into the hot oil, a handful at a time.
- After the initial vapour has boiled off, agitate gently with a slotted spoon to fry evenly
- When tortilla chips are golden brown (about 2 minutes), remove with a spider or slotted spoon.
- Drain on paper towels and season lightly with salt or seasoned salt.
