Holiday Soda
This holiday soda differs from anything you will find in a can and is perfect for the holiday season. It derives from a Flavor Lab recipe.
Ingredients
- ½ cup (120 ml) edible pine needles (preferably Douglas fir)
- Peel from 3 clementine oranges (or a similar easy-to-peel variety such as tangerines)
- 1 cup (240 ml) white sugar
- 1 cup (240 ml) water
- 2 cinnamon sticks
- 4 cloves
- 2 tbsp (30 ml) cardamom pods
Instructions
- Wash the pine needle branch and clementines.
- Remove the pine needles from the branches and peel the clementines.
- Mix the pine needles and clementine peels with the sugar in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.
- Boil the cinnamon sticks, cloves, and cardamom pods in the water.
- Pour the warm water with boiled spices into the container with pine needles and peels.
- Mix the ingredients together and strain the mixture.
- To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.
