Fankasau (Hausa Wheat Puff Puff)

Fankasau is a traditional Hausa fritter, common in northern Nigeria.

  1. Combine the flours and yeast in a bowl. Mix in enough water to form a thick, sticky dough.
  2. Cover the dough and allow to rise for about 1 hour until doubled.
  3. Add the potash water, baking powder, sugar, and salt to the dough. Mix well until thoroughly combined.
  4. Divide the dough into suitably sized portions. Dip your hands in oil, and shape the dough portions into rounds with a hole in the center.
  5. Heat a pot of oil. Working in batches, add the dough and deep fry until golden brown on all sides.
  6. Remove the fritters, and drain any excess oil.
  7. Serve fresh.
